Irish Cream White Chocolate Mousse

This chocolate mousse is a modern rather than a traditional recipe, but such desserts are popular on St Patrick's Day and other special occasions in Ireland.

16 ounces white chocolate, finely chopped
1 quart heavy cream
3 ounces Irish Cream liqueur (such as Bailey's or Carolan's)
seasonal fruitdark chocolate shavings
In a 2 quart saucepan, bring the heavy cream to a simmer. Add the chcolate and stir until melted. Allow the mixture to cool, then add the Irish Cream. Refrigerate overnight. With a hand or stand mixer, whip the mixture until hard peak stage. Garnish with seasonal berries and chocolate shavings. Serves 8.
